Why does honey last so long?

The chemistry behind a food that resists spoilage.

A small bee flies from flower to flower. It takes sweet liquid from the flowers and carries it home. This liquid is called nectar.

Many bees live together in a hive, which is their home. Inside, the bees work together to turn nectar into honey. They help remove much of the water from it.

Honey is sweet and thick. It can stay good for a very long time when it is stored properly. One important reason is that honey contains very little water. Most tiny living things that make food go bad cannot grow easily in it.

Bees make honey as food for themselves. People also collect and eat honey, often with bread or in tea.

Making honey takes a lot of work. A bee visits many flowers, then returns home. Other bees help with the next steps.

A jar of honey may look simple, but it comes from many small trips and a lot of teamwork.

The bees bring sweet food back home. They work together. After some time, they make honey. Honey is very sweet. We can eat it, but a baby under one year old must not eat honey.
